Juice of ½ a lime & 1 tbsp lime zest

  1. Add the blueberries, sugar, lime juice, and lime zest to a small saucepan.

  2. Bring the mixture to a rolling boil over medium heat, stirring occasionally.

  3. Reduce the heat to medium-low and simmer for 10 minutes, stirring occasionally, until the berries have broken down.

  4. Transfer the jam to a clean jar and allow it to cool completely at room temperature.

  5. Refrigerate until chilled. The jam may look a little runny at first, but it will thicken beautifully as it cools.
