


Unexpected Blueberry Jalapenos


Ingredients:
8 jalapeƱos, halved lengthwise and seeded
200 g (2 cups) Monterey Jack cheese, grated (Western Family)
80 g (1/3 cup) cream cheese, softened (Western Family)
125 g (1 cup) blueberries
1 tbsp honey, for drizzling (Only Goodness)
1 tsp fresh thyme leaves, plus more for garnish
1 tsp olive oil (Only Goodness)
Black pepper for topping

Directions:
PREPARE
Preheat oven to 400°F (200°C).
Halve the jalapeƱos lengthwise and remove the seeds and membranes.
Place on a baking sheet cut side up. Brush lightly with olive oil.
MAKE THE CHEESE FILLING
In a bowl, mix together grated cheese and cream cheese until well combined.
FILL THE JALAPEĆOS
Spoon the cheese mixture evenly into each jalapeƱo half.
Gently press blueberries into the top of each pepper.
BAKE
Bake for 18-20 minutes, or until the jalapeƱos are tender, the cheese is melted and golden, and the blueberries have softened and begun to burst.
SERVE
Remove from the oven and drizzle with honey.
Sprinkle with fresh thyme and a little black pepper.
Serve warm.
