Prepare the Steaks Remove steaks from the fridge 20–30 minutes before cooking. Pat dry thoroughly and season generously on both sides with salt and pepper.

Sear Add steaks to the hot pan and sear 3–4 minutes per side, without moving, until a deep golden crust forms.
