Ahi Tuna & Quinoa Poké Bowl

1/4 cup Western Family reduced sodium soy sauce
2 tsp Rice vinegar
2 tsp Sesame oil
2 Green onions (thinly sliced, save some for garnish)
1 lb Sushi grade ahi tuna cut into cubes (preferably fresh)
Western Family Sesame seeds
Heirloom cherry tomatoes (cut in half)
Cooked Western Family Organic White Quinoa
Avocado (cut in squares or in half)
Carrots (cut in thin strips)
Fresh greens
Cucumber (round slices)
Directions
- In a large bowl, whisk together soy sauce, rice vinegar, sesame oil, green onions and sesame seeds. Add tuna and toss to coat. Refrigerate for at least 15 mins.
- To serve, add quinoa to bottom of each bowl. Layer fresh greens, tomatoes, avocado, carrots, cucumber and tuna in sections of the bowl.
- Top with green onions and sesame seeds for garnish.

Directions
