Easy Meatloaf

Ingredients
500 g extra lean ground beef
1 large onion, finely chopped
1 garlic clove, chopped
3 slices whole wheat bread, toasted, crumbled, crusts removed
8 mL each crushed dried thyme and oregano
1 egg, slightly beaten
60 mL fresh cilantro and/or parsley, chopped
3 mL pepper
1 package Western Family Bacon
Directions
- Preheat oven to 350°F (180°C)
- In bowl, combine beef, onion, garlic, bread crumbs, thyme, oregano, egg, cilantro and/or parsley, and pepper, mixing just until combined.
- Spoon into a 9 x 5″ (23 x 12.5 cm) loaf pan, smoothing top. Spread bacon evenly over top.
- Bake for 55 minutes or until firm to the touch and meat thermometer registers 170°F (75°C). Pour off fat.
Make ahead: make meat loaf and lay bacon on top. Cover and refrigerate for up to 3 hours before baking.
Health tip:
Meat loaf doesn’t have to be high fat. Use lean ground meats or try soy-based ground meat alternatives.
