Bacon and Goat Cheese Stuffed Peppers

6 peppers
6 slices bacon
1 cup goat cheese
2 tbsp red onion, finely chopped
1 clove garlic, minced
1 tbsp chives, chopped
Directions
- Preheat your oven to 400 F.
- Place the bacon on a baking sheet and cook for 15 minutes or until crispy.
- Transfer to a paper towel to cool.
- While the bacon cooks, slice the peppers in half and scoop out the seeds.
- Add the goat cheese, red onion, garlic, chives and salt and pepper to a mixing bowl.
- Once the bacon has cooled, crumble it into the bowl and mix it together.
- Stuff the peppers with the bacon goat cheese mixture, and place them on a baking sheet.
- Bake the stuffed peppers for 10 minutes or until the pepper is slightly softened.
- Cool for 5 minutes, and enjoy!
