Bacon and Goat Cheese Stuffed Peppers

Ingredients
6 peppers
6 slices bacon
1 cup goat cheese
2 tbsp red onion, finely chopped
1 clove garlic, minced
1 tbsp chives, chopped
Directions
  1. Preheat your oven to 400 F.
  2. Place the bacon on a baking sheet and cook for 15 minutes or until crispy.
  3. Transfer to a paper towel to cool.
  4. While the bacon cooks, slice the peppers in half and scoop out the seeds.
  5. Add the goat cheese, red onion, garlic, chives and salt and pepper to a mixing bowl.
  6. Once the bacon has cooled, crumble it into the bowl and mix it together.
  7. Stuff the peppers with the bacon goat cheese mixture, and place them on a baking sheet.
  8. Bake the stuffed peppers for 10 minutes or until the pepper is slightly softened.
  9. Cool for 5 minutes, and enjoy!
