Ingredients
1lb Western Family regular Ground Beef chub
1 medium onion, diced
4 cloves garlic, minced
15 ounce can corn kernels, rinsed and drained
15 ounce can black beans, rinsed and drained
1 envelope taco seasoning
10 ounce can red enchilada sauce
14 ounce can diced tomatoes
1 cup minute rice, uncooked
1 cup chicken broth
2 cups shredded Mexican cheese, divided
2 tbsp olive oil
Cilantro (optional garnish)
Green Onions (optional garnish)
Directions

-          Preheat oven to 375 degrees F.

-          Spray a 9 x 13 baking dish and set aside.

-          In a large frying pan, cook onion and garlic with olive oil until onions have softened.  Pour onion and garlic mixture into prepared baking dish.

-          Using the same frying pan, cook ground beef over high heat, breaking up into crumbles while cooking.

-          Once meat has cooked through and is no longer pink, drain off some grease and then pour into the baking dish.

-          Add corn, black beans, taco seasoning, diced tomatoes, enchilada sauce, uncooked minute rice and 1 cup of shredded cheese and stir well to mix.

-          Pour chicken broth over all the ingredients and mix well.

-          Cover baking dish with foil and bake for 35 minutes.

-          Remove from the oven and check that the rice has softened.  If rice is not softened, place back into oven for an additional 5 minutes and check again.  Once rice has softened, remove foil and sprinkle the remaining 1 cup of cheese over the casserole and bake uncovered for an additional 5 minutes until cheese is melted.

-          Garnish with cilantro and/or green onions and serve.
