Ingredients
1 package chicken breast (boneless, skinless)
1 pear (diced)
1 green apple (diced)
1 orange or yellow pepper (diced)
1/2 cup shredded mozzarella cheese
1 teaspoon dried thyme
1 teaspoon garlic powder
Salt and pepper to taste
1 pizza dough (store-bought or homemade)

Directions
  1. Preheat oven to 400°F. 
  2. Cook the chicken: Season with salt, pepper, garlic powder, and thyme. In a skillet over medium heat, cook the chicken until golden and cooked through (about 6-7 minutes). Use a fork to shred the chicken.  
  3. In the same skillet, add the diced pepper and sauté until tender, about 3-5 minutes. Remove from heat and add the pear and green apple slices. Toss to incorporate. 
  4. Roll out the pizza dough into a rectangle. Spread the filling evenly over the dough, leaving a 1-inch border on the edges. Sprinkle the shredded mozzarella cheese on top. Starting from one end, roll the dough tightly into a log.
  5. Slice the log into 1-inch rolls and place them on a parchment-lined baking sheet. Brush the tops with olive oil and bake for 15-18 minutes or until golden brown.
  6. Enjoy these warm, comforting pizza rolls as a fall meal or appetizer, perfect for the season!
