Ingredients
1 sirloin tip roast (approx. 2–2.5 lbs)
Olive oil
Kosher salt
½ tsp black pepper
1 tsp garlic powder
1 tsp dried thyme or rosemary
1½ cups Jasmine Rice (uncooked)
¾ cup Olympic Krema Yogurt
Zest of 1 navel orange
3 tbsp fresh navel orange juice
2 tbsp finely chopped fresh cilantro
2 navel oranges, peeled and segmented
1 cup Armstrong cheese, shredded
1 cup Western Family frozen blueberries
Directions
1. Roast the Sirloin
- Preheat oven to 375°F (190°C).
- Pat sirloin dry and place in a roasting pan.
- Rub with olive oil, salt, pepper, garlic powder, and herbs.
- Roast for 40–50 minutes, or until internal temp reaches 135–140°F (medium).
- Rest for 10 minutes, then slice thinly against the grain.
2. Cook the Rice
- Rinse jasmine rice under cold water.
- Combine rice and water in a saucepan, bring to a boil.
- Reduce heat, cover, and simmer 15 minutes.
- Fluff and let cool slightly before assembling bowls.
3. Make the Citrus Yogurt Dressing
In a small bowl, whisk together:
- Olympic Krema yogurt
- Orange zest and juice
- Chopped cilantro
- Olive oil
- Salt
Taste and adjust seasoning as needed.
Assemble the Bowls (5 Servings)
Divide evenly into 5 meal prep containers:
- Jasmine rice
- Sliced sirloin
- Orange segments
- Frozen blueberries
- Shredded Armstrong cheese
Drizzle with citrus yogurt dressing or store separately for freshness.
