16 chicken thighs
½ tsp. salt
1 tsp. black pepper
4 tbsp. olive oil
Soft taco shells, grilled
Diced cucumber
Diced tomatoes
Crumbled feta

2 cups shredded romaine lettuce
2 carrots, matchsticks
1/3 cup sliced green onions
1 orange pepper, sliced
3 cups Vermicelli rice noodles, cooked & chilled
1/3 cup toasted peanuts, chopped

Parsley or cilantro, for serving

1 large red bell pepper, chopped
1/3 cup sliced green onion

Easy Meal Prep Chicken Thighs
INSTRUCTIONS:
- Remove skin and bones from chicken thighs and place in a large bowl. Season with olive oil, salt and black pepper, mix to combine
- To two (2) large heated fry pans, separate chicken thighs and cook over medium heat, about 15 minutes, turning occasionally (NOTE: time may vary depending on meat thickness)
- Season with more salt and black pepper and continue to cook until chicken has cooked through
- Once done, remove from pan and allow chicken to rest, about 5 minutes prior to slicing
- Store prepped chicken in an air tight container to use in recipes throughout the week.

INSTRUCTIONS:
- Properly reheat prepped chicken thighs
- To a warmed taco shell, layer Tzatziki, cucumber, tomatoes, chicken, feta and green onions. Garnish with parsley and top with more Tzatziki.

Meal idea 2: Chicken Spring Roll Salad
INSTRUCTIONS:
- Cook rice noodles according to package instructions. When done, rinse under cool running water and place in a large salad bowl
- Properly reheat 2 cups of the prepped chicken in a fry pan or skillet
- To the salad bowl with rice noodles, add heated chicken, romaine lettuce, carrots, green onions, orange bell pepper and toasted peanuts.
- Pour Western Family peanut satay cooking & dipping sauce over top, toss to combine.
- Serve with lime wedges and torn parsley.
