Ingredients
16 chicken thighs
½ tsp. salt
1 tsp. black pepper
4 tbsp. olive oil
Soft taco shells, grilled
Diced cucumber
Diced tomatoes
Crumbled feta
Western Family Tzatziki dip
Sliced green onions
Parsley, torn
2 cups shredded romaine lettuce
2 carrots, matchsticks
1/3 cup sliced green onions
1 orange pepper, sliced
3 cups Vermicelli rice noodles, cooked & chilled
1/3 cup toasted peanuts, chopped
Western Family Peanut Satay Cooking & Dipping Sauce
Parsley or cilantro, for serving
Lime wedges, for serving
200g snow peas
1 large red bell pepper, chopped
1/3 cup sliced green onion
¼ cup Western Family Honey Garlic Cooking & Dipping Sauce
Cooked rice, for serving

Easy Meal Prep Chicken Thighs

INSTRUCTIONS:

  1. Remove skin and bones from chicken thighs and place in a large bowl. Season with olive oil, salt and black pepper, mix to combine
  2. To two (2) large heated fry pans, separate chicken thighs and cook over medium heat, about 15 minutes, turning occasionally (NOTE: time may vary depending on meat thickness)
  3. Season with more salt and black pepper and continue to cook until chicken has cooked through
  4. Once done, remove from pan and allow chicken to rest, about 5 minutes prior to slicing
  5. Store prepped chicken in an air tight container to use in recipes throughout the week.

 

Meal idea 1: Greek-Inspired Chicken Tacos

INSTRUCTIONS:

  1. Properly reheat prepped chicken thighs
  2. To a warmed taco shell, layer Tzatziki, cucumber, tomatoes, chicken, feta and green onions. Garnish with parsley and top with more Tzatziki.
  3. Enjoy!

 

Meal idea 2: Chicken Spring Roll Salad

INSTRUCTIONS:

  1. Cook rice noodles according to package instructions. When done, rinse under cool running water and place in a large salad bowl
  2. Properly reheat 2 cups of the prepped chicken in a fry pan or skillet
  3. To the salad bowl with rice noodles, add heated chicken, romaine lettuce, carrots, green onions, orange bell pepper and toasted peanuts.
  4. Pour Western Family peanut satay cooking & dipping sauce over top, toss to combine.
  5. Serve with lime wedges and torn parsley.
  6. Enjoy!

Meal idea 3: Honey Garlic Chicken Rice Bowls

INSTRUCTIONS:

  1. To a fry pan or skillet heat honey garlic sauce until small bubbles form. Add chicken and continue to cook until coated and chicken has reheated thoroughly  
  2. 5 minutes prior to turning off the stove, add vegetables, mix and continue to cook
  3. Serve with heated rice and green onions.
