Grilled Vegetable Salad

Ingredients
1 Red pepper, cut into quarters
1 Orange pepper, cut into quarters
1 Green pepper, cut into quarters
1 Vidalia onion or red onion, cut into 6 slices
8 Mushrooms, halved
1 tbsp (5 ml) Western Family extra virgin olive oil
2 tbsp (30 ml) Western Family balsamic vinegar
1 tsp (5 ml) grainy mustard
2 tsp (10 ml) Western Family extra virgin olive oil
1 tsp (5 ml) Western Family liquid honey
1 small Garlic clove, minced
Directions
- Preheat the barbecue or broiler to medium-light heat.
- In a large bowl, toss the vegetables with 1 tsp of olive oil.
- Place the vegetables on a baking sheet to broil directly on the barbecue. Grill or broil until sightly blackened.
- Whisk dressing ingredients together. Toss in the vegetables. Serve at room temperature.
