Ingredients
2 ripe Canadian tomatoes, grilled until slightly charred
1 baguette, sliced and grilled
Extra virgin olive oil
1 garlic clove, peeled
Fresh basil leaves, chopped or torn
Sea salt
Fresh cracked black pepper, to taste
Balsamic glaze, for drizzling
Directions

1. Grill the Tomatoes & Baguette:

  • Slice the tomatoes in four, coat in extra virgin olive oil and grill until softened and slightly
  • charred (about 3–4 minutes). Drizzle the baguette slices with extra virgin olive oil and grill until golden and crisp.

2. Rub the Bread with Garlic:

  • While the bread is still warm, rub each slice with the raw garlic clove for a subtle, fragrant layer of flavor.

3. Chop the Tomatoes:

  • Once cool enough to handle, roughly chop the grilled tomatoes. If they’re too juicy, you can spoon off excess liquid.

4. Season the Tomatoes:

  • In a bowl, toss the tomatoes with a drizzle of olive oil, salt, pepper, and fresh basil.

5. Assemble:

  • Spoon the seasoned tomato mixture onto the grilled, garlic-rubbed baguette slices.

6. Finish:

  • Drizzle with balsamic glaze and serve immediately.
