Overnight Eggnog French Toast
Overnight Eggnog French Toast

Ingredients
4 large eggs
2 cups Eggnog
1 tsp vanilla extract
1/2 tsp cinnamon
6 slices thick bread, stale is best
2 tbsp unsalted butter
Blueberries
Raspberries
Strawberries, sliced for decoration as tree base
Powdered sugar, for dusting
Directions
  1. In a medium bowl, whisk eggs thoroughly.
  2. Add 2 cups eggnog, 1 tsp vanilla extract and ½ tsp ground cinnamon.
  3. Whisk to combine and set aside. - Place 6 slices of stale bread into a large, shallow baking dish in a single layer.
  4. Pour egg mixture over the bread slices, flip once to coat both sides.
  5. Cover baking dish with plastic wrap and refrigerate overnight.
  6. In the morning, preheat a large skillet over medium heat.
  7. Add 2 tbsp butter and allow to melt, swirling evenly over the bottom of the pan.
  8. Fry the bread slices about 3 minutes per side or until golden brown.

For Presentation – on a platter – to look like a Christmas Tree:

  1. Remove French toast from skillet, cut off bottom corners at an angle to form v shapes for the tree layers.
  2. Place bread slices onto serving platter and create a Christmas tree by layering your slices upwards.
  3. Arrange sliced strawberries at the bottom of the tree to form a tree trunk
  4. Arrange a few raspberries at the top of the tree to form a star.
  5. Create a garland using blueberries
  6. Sprinkle with a dusting of powdered sugar and serve immediately.
