Ingredients
1 prime rib
1kg 3 garlic cloves
2 tsp chopped thyme
2 tsp chopped rosemary
3 tbsp olive oil - divided
Salt and pepper to taste
Directions

Instructions to prepare the rub:

  1. chop the garlic finely with a knife and add it to a small bowl. (It’s important to not mince the garlic with a garlic press, or else it will burn.)
  2. Add the thyme, rosemary, 2 tbsp olive oil, salt and pepper to the bowl.
  3. Mix ingredients together until well combined.

Instructions for the prime rib:

  1. Bring the prime rib to room temperature.
  2. Preheat the oven to 500F.
  3. Add 1 tbsp olive oil. Add salt and pepper to the prime rib on all sides.
  4. Add garlic/herb rub to the prime rib on all sides.
  5. Place the prime rib in the oven and roast it for 15 minutes at 500F.
  6. Turn the heat down to 325F and cook for an additional 14 minutes per pound for medium rare. A thermometer inserted should read 125-130F.
  7. Remove the prime rib from the oven and tent it with aluminum foil, let it rest for 15 minutes.
  8. Remove the bone from the prime rib and cut the meat into slices.
