Ingredients
1 box of store-bought puff pastry (397g)
1 cup of store-bought pesto
1/2 cup of shredded Parmesan Cheese
1 egg, beaten
Directions

Directions:

1.  On a floured surface, roll out the thawed puff pastry into two 12-by-14-inch rectangles.

2.  Using a sharp knife or pizza cutter, cut a 1/2-inch-thick strip from one size and set aside. This will be for the stem of the shamrock.

3.  Spoon and pesto onto each sheet and spread to cover the entire surface.

4.  Sprinkle the parmesan cheese on top and using the back of a spoon, press down the cheese into the pesto mixture. This will help the cheese to stay in place when rolling

5.  Roll both long sides toward the middle until they meet and cut the log into 1/2 to 1 inch thick slices.

6.  Arrange three slices together on a prepared baking sheet to create a shamrock shape, then cut the reserved pastry strip to create a steam for each shamrock.

7.  Brush each shamrock with an egg wash and bake at 400F for 15-19 minutes.
