Ingredients
4 bell peppers, orange and yellow
2 striploin steaks
1 large yellow onion, sliced
2 cloves garlic, minced
1 ½ pound Western Family red mini potatoes, halved
⅓ cup parsley, chopped
¼ cup unsalted butter, melted
3 tbsp olive oil
Italian or Greek seasoning to taste
Salt
Pepper
Directions

1. Preheat oven to 425°F.

2. To make garlic butter, mix melted butter with garlic. Set aside.

3. Place whole potatoes in a large pot, add cold water covering potatoes and salt the water generously. Bring to a boil and cook 7-8 minutes until tender.

4. Drain potatoes, pat dry and cut into halves.

5. On a large sheet pan, place potatoes, onions and peppers. Drizzle with 2 tbsp olive oil, season with salt, pepper, parsley and Italian or Greek seasoning. Toss evenly.

6. Roast vegetables for approx. 20 min. Set aside.

7. Cut steaks into slices, drizzle with 1 tbsp olive oil, season with salt and pepper and add garlic butter over top.

8. Place steak slices onto the sheet pan with the roasted vegetables, on the broil setting cook 4 minutes each side, watching closely.

9. Let steak rest 10 minutes and serve with vegetables.
