Stove Top Stuffin Muffins

Ingredients

  • 2 Stove Top Turkey Stuffing
  • 1 tbsp (15 mL) unsalted butter
  • 1/2 cup (125 mL) white onions, diced
  • 1/4 cup (60 mL) carrots, diced
  • 1/4 cup (60 mL) celery, diced
  • 1 garlic, minced
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) pepper
  • 1/2 red apple, peeled and finely chopped
  • 4 eggs
  • 1/4 cup (60 mL) dried cranberries
  • 1 cup (250 mL) cheddar cheese, shredded

Directions

Pre-heat your oven to 350 degrees F.

Cook Stove Top stuffing as per box instructions. Then set aside.

Melt 1 tablespoon of unsalted butter in a pan on medium heat.

Add onions, carrots, celery, garlic, salt and pepper to pan. Cook for 5 minutes, stirring occasionally.

Add half a peeled and finely chopped apple. Cook for 3 minutes. Then set aside.

Meanwhile, in a large mixing bowl, whisk 4 large eggs.

Then mix in the Stove Top stuffing and dried cranberries. Slowly combine together.

Spray a muffin baking tin with baking spray.

Form 1 ½ tablespoons of stuffing mixture in the bottom of the muffin tins.

Then add 1 tablespoon of apple-veggie mixture.

Then add 1 cup of cheddar cheese.

Top with the remaining Stove Top stuffing.

Once each muffin tin is filled, place in the oven and bake for 30 minutes.

Once done, let cool for about 5 minutes.

When taking the muffins out of the tin, they might still stick to it a bit. You can use a knife to go around the edges of each muffin to loosen it up.

Then enjoy with gravy if you wish.
